Food is very important to me. I like to cook and try new dishes but I don’t like to have recipes that have a million ingredients. This is one of the most popular dishes in my house that is pretty quick and easy. It has a multitude of flavors and tastes great. Also, it is very healthy, but you don’t have to tell anyone in your family that. There are a few asian ingredients that you may have to buy but they store well and can be used again later. I hope you enjoy.
Thai Lettuce Wraps
1 tablespoon olive oil
1 pound ground chicken or turkey
2 cloves garlic, minced
2 tbsp diced onion
2 tbsp diced red pepper
1/4 cup hoisin sauce
2 tbsp soy sauce
1 tbsp rice wine vinegar
1 tb freshly grated ginger
1/4 cup diced water chestnuts
1 green onions, thinly sliced
1 head butter lettuce or iceberg lettuce-washed and dried. (You want to pull the lettuce apart so you have cups.)
Heat up the olive oil and cook the chicken or turkey in a large pan for about 4-6 minutes. Make sure to break apart clumps. You want it in small pieces. Drain any fat or juices.
Add the onion, pepper, and garlic and cook with the meat for 3-4 minutes until tender. Add the soy sauce, rice wine vinegar, hoisin and ginger. Mix thoroughly and heat on low.
Stir in chestnuts and green onions. Salt and pepper to taste, but you don’t need it. You can also add siracha for an extra kick.
That is it. You are done.
Use your lettuce as the cup and serve it up. I also have brown rice with it and whatever falls out of the lettuce cup gets eaten with the rice. Delicious!
