The Mojito

I have mint in my garden and it is growing like crazy, which is what mint does. To put it to good use, I muddled my way to a great cocktail. Here it is:

(in the left photo, my mint is in the back; quietly taking over the basil). *** If you want to plant your own, put it in a pot first.  It needs to be contained or else….

On to the mojito- which came from Havana, Cuba by the way:

First, you need to make simple syrup. It’s easy. Add 1 cup water and 1 cup sugar. Put in a small pot/saucepan and mix. Boil until the sugar dissolves. Take off heat and cool. You can store this in the fridge for about 1 month.

Next add about 10 mint leaves to a sturdy glass. Add 1 small wedge of lime and muddle. Muddling is pressing the ingredients together to release their flavors. Add ice to the glass. Pour 1.5oz white rum over the ice. Top with club soda. Squeeze a lime wedge on top and mix. You can always add more simple syrup at this point to make it sweeter.
