Summer is not officially till June 21, but the heat is upon us and I’m craving a summer cocktail. No, not the fruity kind, but the SPICY kind. When people hear the word “jalapeño” they usually break into a big smile or they break into a big sweat. There is no in between. If you are in the camp that loves spicy foods then this is your drink for the summer: Jalapeño Margaritas.
I have some jalapeno’s in my garden so I cut up one into small strips (seeds included) and added it to a bottle of clear tequila. You don’t need to buy an expensive bottle because it is for a mixed drink and not for drinking straight. Let the bottle sit on the counter for 24 hours (or more if you like it extra spicy. The longer you leave it, the spicier it will be). When you are ready, strain the vodka into a container and then pour it back into the bottle.
****If you don’t want to infuse your own vodka because, after all, it is (almost) summer, you can buy tequila infused with jalapeños at the liquor store. You can also buy jalapeños at the grocery store and use them for your infusion. You don’t have to have a garden. Just saying. Whatever you decide, no judging.
Now that you have your jalapeño infused tequila, let’s get cocktailing!
For your glass, take a lime wedge around the rim and then turn upside down onto a plate of salt and sugar mixed. Set aside.
In a cocktail shaker, add ½ lime juiced, 1 tsp of agave syrup (a squirt), a splash of sweet and sour mix and 1-3 jalapeño slices. Muddle everything together. Add 2-4 oz of tequila, depending on how good a start to your summer you want. Add some crushed ice and shake. Pour into a glass and garnish with jalapeno slices or a lime and enjoy.
*If you want it spicier, you can muddle more jalapeños or add more jalapeños to your infused tequila and let it sit some more.
